Menu for 10/16-10/22 with grocery list

This week Eric is working nights so he doesn't need leftovers for lunch. So...we will have them for dinner. I have planned four meals plus chicken salad to have for lunches (or snacks). I always plan my meals for the week based on Eric's work schedule. If he takes leftovers for lunch, I don't make him eat them for dinner, too. We save them and have a "leftover night" buffet and then clean out the refrigerator.

All these recipes are already on the blog.

Sunday - Chili and Cornbread
Monday - Leftovers
Tuesday - Chicken Spaghetti, Salad, French Bread
Wednesday - Leftovers
Thursday - Smothered Enchiladas, Refried Beans
Friday - Leftovers
Saturday - Pork Tenderloin w/red wine & mushrooms, Mashed Potatoes, Green Beans, Rolls

Lunches: Chicken Salad

Grocery List

6-8 boneless, skinless chicken breasts
2 lbs. ground beef (1 for chili and 1 for enchiladas)
2-3 pound boneless pork tenderloin (more if you have a large family or big eaters - or both!)

2 small onions
1 green pepper (optional for chili)
celery (optional for chicken spaghetti)
the makings of a salad of your choice
potatoes for mashed potatoes
1 large Red Delicious apple
pecans or walnuts

green beans - canned, frozen, or fresh

2 cans kidney beans (1 light, 1 dark)
28-oz. can petite diced tomatoes
2 cans sliced mushrooms
2 cans cream of chicken soup
1 can cream of mushroom soup
1 (4 oz.) can green chilies
1 can refried beans

boxed cornbread mix (if you don't make your own)
12 (6 in.) flour tortillas
envelope taco seasoning
8 oz. spaghetti noodles
corn flakes cereal
envelope of onion soup mix
French bread (from the bakery, the bread section, or by Pillsbury - even homemade - whichever you prefer)
Dinner rolls

16 oz. sour cream (use 1/2 cup for the chicken spaghetti and the rest for the enchiladas)
cheeses: mozzarella (for 1 cup shredded); cheddar (for 2 cups shredded); Parmesan (for 1/2 cup shredded)

Staples and spices: milk, chili powder, cumin, sugar, red pepper (optional), white wine vinegar, minced garlic (I buy the jarred kind), parsley flakes, garlic powder, salt, pepper, mayonnaise, eggs, sweet pickle relish, beef bouillon cubes, soy sauce, red wine or red cooking wine, butter
